Equipment

  • 1 Food processor
  • 1 Sharp knife
  • 1 Cutting board
  • 1 medium bowl

Ingredients

  • 2 ripe avocados peeled and pitted
  • 1 cup cottage cheese full-fat works best but you can use low-fat cottage cheese as well
  • 2 tablespoons fresh lemon juice or lime juice if using cilantro herbs
  • 1/2 teaspoon lemon zest or 1 teaspoon
  • 1 small garlic clove minced (or 1/2 teaspoon garlic powder)
  • 2 tablespoons fresh herbs such as dill chives, green onion or fresh cilantro finely chopped
  • 2 tablespoon fresh dill chopped
  • Salt and freshly ground black pepper to taste

Instructions

  • Cut one half of an avocado in smaller pieces if you would like a chunky dip.
  • In a food processor, blend 1 1/2 avocados, cottage cheese, lemon juice, and garlic until smooth.
  • Transfer to a medium bowl and fold in the chives, dill or whatever fresh herbs you are using.
  • Finally, stir in the chunks of avocado. You'll want to do this last, so the chunks don't fall apart.
  • Season with salt and black pepper.

Notes

Storage:
    • Make ahead and refrigerate for up to 2 days in advance.
    • Cover with cling wrap and have the dip actually touch the dip to prevent the dip from browning.
    • Do NOT freeze.

Serving Suggestions:
    • Serve as a dip for veggies, tortilla chips or bread sticks.
    • Toast some denser bread and cut it up to use as bread sticks. I used this sourdough with grains bread. This denser bread makes for great breadsticks as they stay fairly stiff and don't flop over with the weight of the cottage cheese and avocado dip.
    • Use as a spread on sourdough bread or Rye bread or in a wrap for a tasty lunch or dinner.
    • Cut up some veggies and toast and serve with the dip on a cutting board for a lovely cafe-style lunch.
