Cottage Cheese Avocado Toast – 3 Café-Inspired Ideas

This cottage cheese avocado toast is my current obsession – quick and easy to make with just a handful of ingredients but fancy enough for company! The combo of creamy avocado and tangy cottage cheese makes the perfect base for three delicious toppings: smoked salmon with fresh herbs, juicy sliced tomatoes, or crunchy toasted seeds.

I love how these work for basically any situation – for busy mornings, a café-style lunch, or even served on smaller bruschetta pieces for a party appetizer. The European-inspired flavors feel special without any complicated techniques.
Definitely a step up from your plain avocado toast! Perfect when you want something that looks pretty on the plate but doesn’t keep you stuck in the kitchen forever 😉

Inspiration for these Cottage Cheese Avocado Toasts
I recently went to the Baker in the Rye Bakery in Melbourne. What a find! They are an artisan rye bakery and make Latvian bread and Riga bread, both made with rye flour. With such delicious Latvian bread in my house and my Baltic heritage, I knew I had to make some avocado cottage cheese toasts for lunch this week.


Latvians use a lot of cottage cheese on bread 😋 I experimented with lots of different variations. Here are my three favorite toppings – smoked salmon, tomato and toasted seeds – although the plain avocado toast version with just cottage cheese is yum too!

Ingredients for Basic Avocado Cottage Cheese Toast

- Quality bread – I love dark rye, like the Latvian bread in the photos, but a good quality sourdough bread, white bread, whole grain bread, plain white toast or your bread of choice will work just fine
- Cottage cheese – full-fat works best, but you can use fat-free cottage cheese as well
- Ripe avocado – fresh avocado. It needs to be ripe, but not brown and not stringy. How to tell if your avocado is ripe.
- Salt – flaky salt looks nice, I use sea salt
- Freshly ground black pepper
- Fresh or dried herbs for garnish (optional)
- Lemon juice (optional) – to drizzle over avocado. It helps stop the avocado from turning brown with time, but not really necessary if you are eating your toast soonish.
Additional Ingredients for Toppings

- Smoked salmon – 1 -2 slices, about 50g. This gives it that traditional Baltic vibe, especially if you sprinkle fresh or dried dill on top 😋
- Seeds – pumpkin seeds, sunflower seeds or sesame seeds or bagel seasoning
- Fresh tomatoes – cut into thin tomato slices. Top with fresh herbs, flaky salt and freshly ground black pepper for a pretty presentation.
How to Make Cottage Cheese Avocado Toast
You can pretty much prepare the whole thing on one wooden board 😂

- Toast your favorite bread until golden brown and crisp around the edges.
- Lightly toast the pumpkin seeds and sunflower seeds if using. To toast seeds, just heat up your skillet on high heat and put seeds onto a dry (not oiled) base. Keep an eye on the seeds as they start to brown quickly, and keep stirring with a wooden spoon so they don’t burn. Once they are a bit golden, take them off the skillet and place in a container until you are ready to use them. Or you can just buy pre-roasted seeds or use bagel seasoning.
- In a small bowl, mash the avocado with a bit of lemon juice and a pinch of salt. Or you can just lay the avocado slices on top of the bread or mash it directly on the slice of toast.
- Slice the tomatoes and chop the herbs.


- Spread the cottage cheese evenly over the avocado mash.
- Sprinkle with toasted seeds for extra flavor if using
- Gently place the smoked salmon slices on top of the cottage cheese.
- gently place the thin slices of tomato on top of the cottage cheese.
- Finish with fresh or dried herbs, a crack of black pepper and a light sprinkle of flaky sea salt.



Serving suggestions
- I love slicing the bread up on a wooden board, and then chopping up the tomatoes and herbs on the same board. It’s so easy to serve – everyone can just grab what they like. Then serve the cottage cheese avocado toasts on wooden boards to get that cafe-style vibe.
- Serve with slices of fresh tomatoes and a French carrot salad and toss the extra fresh herbs on top.
- Make some smaller bruschetta size cottage cheese avocado toasts and serve as an appetizer or at a large gathering.
- Smack another piece of toast on top and take the cottage cheese avocado sandwich to work!

Storage
- This is not a food you can make too much in advance. It’s best to make the toast and smash the avocado right before eating, for the best texture, flavor and color.
- For meal prep, you can slice your bread and tomatoes, chop your herbs and toast your seeds, but it’s best to toast the bread and spread the avocado and cottage cheese right before serving.
- Pre-chopped herbs can be stored in the refrigerator in a damp paper towel inside a container for 3-4 days.
- Store in the fridge for a day. The avocado toast with cottage cheese will still taste ok the next day, but the toast will not be very crispy.
- You can store any unused smashed avocado in an airtight container for a day or so, if you sprinkle it with lemon juice.

- 4 slice of quality sourdough bread white bread, whole grain bread, rye bread or your bread of choice (I used Latvian bread)
- 3 tablespoons whole milk cottage cheese full-fat works best, but you can use fat-free cottage cheese as well
- Basic ingredients
- 1/4 ripe avocado Ripe and soft, but not brown or stringy
- 1-2 slices of smoked salmon about 50g
- Fresh dill or chives or green onions for garnish Or 1 tsp dried dill
Additional toppings
- 50 grams smoked salmon slices –
- 2 tbsp pumpkin seeds sunflower seeds or sesame seeds or bagel seasoning (optional)
- 1 tomato fresh tomatoes – cut into thin tomato slices
- 1 tsp Black pepper
- 1 Salt I use flaky sea salt
- 1 tsp Lemon juice or lime juice optional
