There’s something so wonderful about starting a meal with a beautiful bowl of soup – it’s one of those French traditions I absolutely fell in love with during my 15 years living in France.
Here you’ll find a lovely mix of French-style soups that are perfect as elegant starters, plus some heartier Baltic soups inspired by my Latvian heritage that can easily become the main event. The French soups tend to be these lovely vegetable “velouté” soups, such as creamy cauliflower, potato and leek soup, or asparagus and sweet potato soup. There’s also a stunning pumpkin and cauliflower soup that’s become one of my absolute favorites.
Then there are the Baltic-inspired soups that remind me of my childhood and my grandmother’s cooking. These are the kind of soups that really stick to your ribs, like meatball soup (frikadeļu zupa), asparagus and broccoli soup with loads of fresh dill and sorrel soups.
What I love about all these recipes is how they transform simple, everyday vegetables into something that feels so special and satisfying. Most of them are surprisingly easy to make.
