Chicken Drumsticks – About 6-8 drumsticks (roughly 2-2.5 lbs). I love drumsticks because the meat stays so juicy and they’re budget-friendly at the grocery store! Plus, they are so convenient to cook and serve. Eat them as is, or take off the meat and put it in a salad or rice bowl.

Lemon Pepper Seasoning – Use store-bought or make your own with fresh lemon zest and black pepper.

Olive Oil – Just enough to coat all sides of the chicken and get that gorgeous golden color. You could also use avocado oil.

Paprika – Adds a touch of gorgeous golden-red color and a lovely warm, smoky-sweet depth that perfectly balances the bright lemon and bold pepper. It’s what gives these drumsticks that beautiful café-worthy look! Food always tastes better when it looks nice!

Salt – Up to you and probably just a pinch (most lemon pepper seasoning has salt already).

Preheat to 425 degrees F (220 Celsius).

  5. For crispier skin, increase the heat to 400 degrees F (200 Celsius) for the last 2-3 minutes

My Secret Tips for Best Results:

  • Use a meat thermometer – takes all the guesswork out, depending on the size of your drumsticks. The internal temperature of the chicken should reach a minimum of 165 degrees F. I prefer 175 degrees F. Drumsticks can vary in size, so also do a visual check. Check the biggest ones, cutting right through to the one. Juices should run clear, and when you cut into one, it should not be red or pink in color.
  • Don’t crowd them in a single layer – give each drumstick its personal space
  • Don’t skip the fresh lemon zest and juice – You can make these lemon pepper chicken drumsticks without fresh lemon zest and juice, and they will still taste great. But the fresh lemon zest and juice give this lemon pepper chicken drumstick recipe that wow factor.

Storage

  • Pop leftover chicken legs in an airtight container in the fridge for up to 3 days.
  • To reheat, just toss them back in the air fryer or oven at 350 degrees F for about 5 minutes (air fryer) or 10-12 minutes (oven).
  • Or just eat them cold, right out of the fridge. They have tons of flavor!

To Freeze:

  • Let them cool completely after cooking.
  • Store in freezer-safe containers for up to 2 months.
  • To reheat: thaw in the fridge overnight, then pop back in the air fryer at 350°F for 5-7 minutes or oven at 375°F for 10-12 minutes until completely heated through.
  • Pro tip: That fresh lemon juice drizzle is even more important when you reheat them – it brings back all that moisture and bright flavor!

Use a meat thermometer or instant-read thermometer if you have one – the internal temperature should reach 165 degrees F minimum, and you should make sure you are checking the temperature properly. Having said all that, I prefer cooking the drumsticks to an internal temperature of 175-180 degrees F.

No thermometer? Then you need to cut into one of the drumsticks. The juices should run clear when you pierce the thickest part with a knife, and the meat should easily pull away from the bone. The bone and meat near the bone should not be red or pink. If in doubt, put it back in. Another clue: If you wiggle the drumstick and the meat moves freely around the bone, they’re probably ready!

Oh no! This usually happens if they’re overcooked. Make sure to use that meat thermometer and don’t go over 180 degrees F. Also, don’t forget that fresh lemon juice drizzled right when they come out – it makes such a difference!

You don’t need to marinate these at all! Just let them sit in the seasoning mixture for about 10-15 minutes while your air fryer or oven preheats. That’s plenty of time for the flavors to work their magic.

However, if you want to, you can prepare and marinate them for up to 24 hours ahead of time (in the fridge, covered), to help with meal prep.

I have not done this. I thaw them completely first in the fridge. I know some people do bake chicken from frozen (and it requires longer baking). You can look at this USDA website for additional advice on baking from frozen.
