- Fresh parsley or Italian parsley, chopped, for garnish (Optional)

How to Make French Carrot Salad with Pumpkin and Sunflower Seeds

- Roast the pumpkin and sunflower seeds (if using). Place pumpkin and sunflower seeds in a pan over high heat. Stir continually for about 3-5 minuts until seeds turn light brown.

- Then take the seeds off the heat and place onto a separate plate right away, so they don’t burn.

- Next, grate the carrots using a box grater with large holes, a thick grater, or a food processor with a grating attachment. Place the grated carrots in a large bowl. I find it’s easiest just to grate the carrots in a large mixing bowl with a box grater (use the large holes of a box grater for best results). Very quick and no need to get the food processor out.

- Finally,mix the grated carrots with the dressing and seeds. Leave some pumpkin and sunflower seeds to scatter on the side at the end.

- Use medium-sized carrots, organic if at all possible, for optimal sweetness and texture.
- Texture note: A coarser grate gives the salad more crunch and keeps the carrots distinct, while a finer grate absorbs the dressing more quickly and results in a softer salad. I prefer grating the carrots coarsely, but you can also grate them more finely, just not too fine, or the salad will turn into mush after a while. You can also use store -ought shredded carrots.
